This week we will be making juicy pork steaks, fried zucchini, Spanish rice and green beans.
Pork steaks – 2
Rice – 3 cups cooked
Zucchini – 2
Green beans – 2 cups
Prepare and cook the rice according to the package. That will take the longest, about 40 minutes.
Take the pork steaks out of the refrigerator, put them on a plate and season. Let these rest for 15 minutes.
Cook the steaks and the zucchini on medium-high in an oiled cast iron pan. On an RV gas cook top that is about an 8 setting.
Remove the rice from heat. Add a cup of salsa to the rice along with 1/4 cup of water and a tablespoon of taco seasoning. Mix it well and put the cover back on. This should stay hot until the rest of the meal is done.
Serve with a green vegetable of your choice; ours is green beans tonight,
