Keto-Friendly Chicken Parm

Converting a traditional recipe to a Keto-friendly recipe takes a few adjustments and this recipe is a great example of how to do it. Crushed pork rinds are an alternative to bread crumbs for coating chicken. Brandy opted to bake the chicken breasts until they were crisp and golden brown, instead of frying, so this is a very easy chicken parmigiana recipe. There is not a lot of seasoning on the chicken but the cheese and sauce add flavor. Keeping carbs in mind, we opted for a lower-sugar spaghetti sauce and served everything over zoodles. Another Keto-friendly option is sliced and steamed zucchini or cauliflower rice. Here’s the recipe.

Swiss and turkey is a classic deli sandwich combination that’s delicious with the zingy mayo/mustard mixture. The whole little sandwich makes you forget about watching carbs. If following a Keto lifestyle or simply going low carb, but craving bread, a chaffle is a great bread option. The basic chaffle is made of egg and cheese cooked in a mini waffle maker. We came up with a few enhancements to the recipe that will up your chaffle game. Chaffles can be used for sandwiches or as a base for pizza or eggs benedict. Top with berries and cream or sugar-free syrup for a sweet treat. They freeze wonderfully too. Once cool, place in a resealable bag and freeze.
