Berry Good Baked Oatmeal

by Lori L. from San Diego, CA

Easy and delicious, we can’t think of a better way to start a cool day than with this baked oatmeal. The bottom layer is berry pie filling (we opted for blueberry) with fresh strawberries sprinkled on top and the combination of berry flavors is fantastic. Next, the sweetened oatmeal layer is tender and creamy once baked. This is a basic recipe that can be customized with extracts, spices, and pie filling to suit your taste buds. We topped it with vanilla yogurt and a few fresh berries for a wonderful breakfast. Here’s the recipe.

Healthiest Overnight Maple Oatmeal

by Cathy Jacobsen from Ramsey, MN

This overnight maple oatmeal is a delicious way to start the day. Steel cut oats are packed with nutrients. Flaxseeds add more protein, fiber, and Omega 3’s. Maple syrup sweetens up the oatmeal and adds a slight maple flavor. During the cooking process, the dried cherries plump up and add a touch more sweetness. If you’re looking for a breakfast recipe you can prep ahead, this healthier breakfast recipe is delicious and easy. It heats up great. We loved it topped with the suggested bananas, blueberries, and walnuts. Here’s the recipe.

Lower My Cholesterol Oatmeal Cookies

by Garrison Wayne from La Quinta, CA

These oatmeal cookies are sweet, chewy, and kissed with just the right touch of spice. By eliminating egg yolks and substituting half the oil with applesauce these cookies are lightened up without sacrificing flavor or texture. They’re so tender you’d swear they have butter. Honey Oatmeal Bread

by Sue Lally from Vacaville, CA

Homemade bread is delicious and this honey oatmeal bread is out of this world good. It’s a sweet bread sweetened solely with honey. Soaking the oats makes them hearty. This bread recipe encourages you to use less flour when kneading making it a stickier dough to work with, but a lighter bread when baked. Warm honey is brushed on the piping hot bread when fresh out of the oven. The honey soaks into the bread giving it a tender crust. The aroma of this honey oatmeal bread will make it impossible to resist. Here’s the recipe.

Oatmeal Cake

by Jolayne Cooper from Americus, GA

Nutty and moist, this oatmeal cake is a wonderful recipe full of delicious nostalgia. It’s so good, forget a plate. You’ll find yourself eating it from the pan. The texture is almost like an ooey gooey cake but so much better. It’s rich, sweet, and full of spices. The caramelized topping is almost like a German chocolate frosting. Baking it under the broiler makes the topping super gooey. Since it’s put on the cake while warm, it melts into the cake. So good! Here’s the recipe.

I love oatmeal for breakfast, but why bother cooking it? Cold Overnight Oatmeal is the way to go. For each serving simply add a half cup of regular oats to a Mason jar, pour in about a cup of milk and an optional teaspoon to a tablespoon of REAL maple syrup, not the fake stuff. Screw the lid on, give it a shake and put it in the fridge overnight. There are many options for add-ins: flax seed or slivered almonds for protein, dried/fresh fruit such as raisins, blueberries, sliced strawberries, etc. It’s much better, and much more healthful than commercial breakfast cereals.

Not a fan of cold Oatmeal? Microwave it in the Mason jar.
