Suzi’s Mobile Meals – Flourless Salmon Patties

Hi and welcome! I’m glad you and I are going to make this delicious meal together, in our RV! It has it’s challenges, but for the most part it’s straightforward.

Tonight we are preparing Salmon Patties, a side salad and green beans. Let’s begin by looking over the ingredients:

Flourless Salmon Patties
Makes 3 servings

1 cup mashed potatoes (prepared)
1 can (15 oz) salmon
1/4 cup chopped onions
1 tsp parsley
1/8 tsp salt
1/8 tsp pepper
1 egg, separated

We prefer homemade mashed potatoes. Let’s prepare two potatoes so that we have extra. First scrub the skins under running water, then peel. Rinse one more time then place them on the cutting board and cut them into bite-size pieces. Put them in a sauce pan with enough water to cover them. Bring to a boil, reduce heat, cover and let simmer.

While they are starting to heat up, we’ll grab the ingredients for the salads and put those together. Romaine lettuce ripped or cut into bite-size pieces, sugar snap peas and tomatoes. (Gotta remember to buy a cucumber and some carrots next time. Write it on the whiteboard, where we keep the shopping list.) Toss them together and put in the refrigerator to stay crisp and cold.

Open and drain the flaky salmon pieces and put them into a medium-size mixing bowl.

Peel and chop the onion and add to a bowl along with the seasonings.

Separate the egg, putting the whites in a separate small mixing bowl and the yolk with the salmon. Mix all but the egg whites.

Check the potatoes. When they are soft, remove from heat and drain. (At this point if you have a favorite way to make your mashed potatoes, go for it.) Our method: Add 2 tablespoons of butter and about 3 tablespoons of milk to 2 cooked potatoes. Mash them with a potato masher or hand mixer. Set them in the refrigerator to cool a bit. Meanwhile, whip the egg whites until peaks form. Add the potatoes to the salmon and mix, then fold the beaten egg whites into them.

I love using my cast iron pan, so I will get that heating on the stove. Put some oil in the pan, swirl pan to completely cover the bottom. Using a one-quarter measuring cup for the amount, form patties in your hand and place them in the pan, about 4 or 5 at a time. Flip them over when they are browned and cook a few minutes more.

For the final side: green beans. I prefer fresh or even frozen, but canned is what we have on hand. So I empty them into a small pan and heat while the last batch of Salmon Patties are cooking.

Now to plate it. Yum, it is as delicious as it looks!
