Creamy Champagne Dill Pork Chops
by Lisa G. Sweet Pantry Gal from Buffalo, NY
These creamy champagne dill pork chops are a simple dish with a fancy feel. The pork chops are tender once cooked in the rich dill sauce. Champagne gives the sauce a rich flavor. Sour cream thickens it up and the tang pairs nicely with the dill. This is an easy meal to make for a weeknight, but it would also be great for a special occasion. We served ours with buttered egg noodles and broccoli. Here’s the recipe.
Filet De Boeuf En Croute (Filet Mignon in Puff Pastry)
by Kelly Williams from Forked River, NJ
Ooh la la… this filet de boeuf en croute is a fancy restaurant dinner made at home. It reminds us of a Beef Wellington, but better. Filet mignon is topped with garlic and cheese. We opted for Havarti for a slightly more elegant feel. It’s then wrapped in crispy and buttery puff pastry. When sliced open, the steak is perfectly medium-rare. There’s a little prep time for this recipe but the directions are easy to follow. If you are preparing this for Valentine’s Day or company you can fix everything ahead of time. Then when ready, stick it in the oven and enjoy a little extra time with your Valentine or company. Get the recipe here.
Herb Crusted Salmon With Pasta Florentine
by Sheri Raleigh-Yearby from Waco, TX
Wow, this is a fantastic restaurant-quality salmon dinner you can make at home. It is a little time-consuming but once everything is prepped it comes together quickly. We really liked the herb combination on the salmon. The garlic is the complement to all the flavors. The pasta the salmon is served with is simple, no-frills but so good. Spinach and tomatoes cook to perfection in the hot pasta. There is a very slight creaminess to the pasta. Shaved Parmesan on top adds a touch of savoriness and flavor. The perfect meal for a special occasion, like Valentine’s Day or New Year’s Eve. Here’s the recipe.
Chicken Cordon Bleu W/Swiss Dijon Alfredo Sauce
by Lisa Myrick from Wilmington, NC
Lisa’s slightly lightened-up version of chicken cordon bleu is fantastic! It’s much easier to make, too. Placing the Swiss cheese in the Alfredo sauce is a brilliant idea. Not only does it solve the oozing cheese problem, but it allows you to add as much of the sauce your heart desires on top of the chicken. The chicken itself is tender and juicy with a smoky flavor from the ham. Click here for the recipe.
Scallops With Grand Marnier
by Allison Hazell from Jacksonville, FL
If you’d like to prepare a fancy or special dinner at home, try these scallops with Grand Marnier. They are delicate and tender with a mild, slightly sweet flavor. The creamy orange sauce is the perfect pairing. It has a pop of citrus orange flavor. Easy to prepare, these scallops are melt-in-your-mouth good. Get the recipe here.
Balsamic & Bourbon Filet Mignon
by Jennifer R. from Portland, OR
Oh my, this is the perfect dinner for a special occasion. The steak is tender, buttery, a little tangy, and sweet. But what makes this great is the mushrooms. They are like tiny sponges and soaked up all the flavor of the marinade. This dish is perfection! Here’s the recipe.
