Happy Tummy Chicken & Noodles
by Teena Hval from Milwaukie, OR
Teena’s chicken and noodle soup is comfort food at its finest. Whether you want something to help you get over a cold or just to warm you up, everyone will enjoy this soup. The noodles are the star. They taste homemade and are very tender (try to find them if you can). Carrots, celery, and onions are a staple in any good chicken soup. This version also adds garlic and a bay leaf for additional flavor. The broth is on the thicker side, so if you want it thinner use less corn starch. Serve this delicious and easy chicken noodle soup with your favorite crackers and your tummy will be very happy. Here’s the recipe.
Baked Chicken and Rice Dinner
by Diane Taylor from Glen Allen, VA
This chicken and rice casserole will become a must-make on your weekly dinner menu once you try it. Easy and flavorful, the packet of onion soup mix is a game changer. It adds robust flavor and sets it apart from other casseroles similar to this recipe. We used chicken thighs, and they were very tender, but you can use a cut-up chicken or chicken breasts instead. Dusting the chicken with paprika adds a smokiness and a pop of color. This takes 10 minutes to throw together, and the oven does all the hard work. A delicious dinner! Click here for the recipe.
White Bean and Spinach Soup
by Cynthia Holbert from Texas
This white bean and spinach soup is great! Healthy and fairly easy to make, it has an Italian flair. Italian turkey sausage provides a nice base of flavor. It’s packed with navy beans, celery, carrots, wild rice, and spinach in a rich broth. Cayenne pepper does add a kick, so cut back if you don’t like spice. A delicious soup on a cold evening. It complements all the fresh ingredients. Full of flavor and texture, it’s easy to make and ready to serve immediately. Here’s the recipe.
Mandarin Orange Strawberry Spinach Salad
by Marie Guaragna from Arlington, VA
What a treat for the senses this salad is. It’s fabulous to serve on just about any occasion from Sunday brunch to a holiday meal. There is just something classic about the flavors of fresh spinach and strawberries. Add in mandarin oranges and you have a yummy salad. Celery, parsley, and green onions add a bit of crunch and a slight onion flavor. We loved the candied almonds on top. The homemade vinaigrette is light and perfect to dress the salad with.
