How to make hibachi fried rice on your griddle

By Cheri Sicard
In the video below, we join Paul, a professional hibachi chef from Backyard Hibachi, for a lesson on how to make a yummy, crowd-pleasing dish on your griddle: hibachi fried rice.

If you’re a fan of the fried rice served at restaurants like Benihana, imagine serving it up at camp. OK, maybe you won’t have quite the showmanship of a professional hibachi chef like Paul, but it will still be plenty delicious.

What you need to make hibachi fried rice on the griddle

• Oil
• Eggs
• Cooked rice
• Diced onion
• Minced garlic
• Butter
• Soy sauce
• Salt

Watch the video for a full cooking demo. Here are the essential steps:

#1 Spread oil on a hot griddle to coat.

#2 Cook the eggs—Paul shows you how. Move the cooked eggs off to the side.

#3 Add the rice to the griddle and cook.

#4 Add a little more oil and grill some chopped onions and garlic.

#5 Mix it all together and keep stirring until heated through.

#6 Make a well in the center of the rice, add butter to the griddle, and stir to coat the rice with the butter before adding the salt and soy sauce.

Serve hot and enjoy!
