DIY grilled Mediterranean meal prep for easy RV meals

I love pre-prepping for meals in my RV. You mess up the kitchen once but have enough food to make multiple easy, healthy meals. Plus, having a plan helps you use ALL of your groceries. In the video above from Pro Home Cooks (4.31M subscribers, 461M views!), we get some great tips and recipes for healthy Mediterranean meals.

The video was made for cooks in sticks-and-bricks homes, but it works just as well for RVers.

I love that this plan uses a variety of fresh and healthy ingredients. By prepping the components in advance, you will have lots of different options when it comes time to put them together and make a meal.

I also like that our host uses his grill fire for much of the cooking, making this even more appealing to RVers.

Components and recipes covered in the DIY Mediterranean meal prep plan

#1 Roasted beet dip: A nutrition- and flavor-packed spread and dip you can use in meals throughout the week.

#2 Roasted garlic: Another flavorful, healthy recipe addition, it makes sense to roast some garlic while you are roasting the beets for the dip above.

#3 Pickled radishes, spring turnips, and beets: Our host believes, and I concur, it’s always a good idea to have some sort of acid or pickle-type food in the fridge. Pickles just make a great accompaniment to so many foods, especially fatty foods. Not to mention, they also make great snacks. Our host quickly and easily turns some fresh spring turnips, radishes, and half a beet leftover from the dip into tasty pickles for his Mediterranean meal prep.

#3 Lamb patties: Infused with lots of spice and flavors, these patties are easy to make in advance and cook when ready. Leftovers also reheat well and are easy to repurpose, so our host cooks them all at once and uses them throughout the week. If you’re not a fan of lamb, substitute beef.

#4 Flatbreads: You may or may not want to make pita bread from scratch in your RV, but as demonstrated in the video, it’s really not that hard, and they do cook on the grill!

#5 Tzatziki: What Mediterranean meal would be complete without a yogurt sauce? This way is quick and easy to make and is packed with flavor. This is a good place to use some of the roasted garlic you made in step #2.

#6 Hummus: The video shows you how to make this popular and versatile Mediterranean dip completely from scratch—no cans involved! A pressure cooker or Instant Pot makes quick work of it.

#7 Make ahead Mediterranean salad: To add freshness to the meal prep, our host wanted a salad, but he needed a salad that would hold up for several days. When making the hummus, above, he cooked extra chickpeas. These will go into the salad along with a bunch of fresh veggies, most of which were left over from other meal prep components.

What to make with the Mediterranean meal prep components?

Once our host made the components, it was time to assemble them into some meals.

#1: Mediterranean toast: Use the cooked lamb patties, roasted beet dip, and halloumi cheese to make some fancy (but easy to make) open-faced sandwiches.

#2 Fresh Mediterranean salad: The following days our host transformed leftover cooked lamb and halloumi cheese from the toast dish above and some of the pickled vegetables into a hearty and healthy main dish Mediterranean salad.

#3 Crudités and dips: Fresh veggies pair with pickles, beet dip, tzatziki, and pita bread for satisfying appetizers and snacks.

#4 Lamb and lentil bowl: A hearty main course that uses some of the lamb patties mixed with healthy lentils. It paired beautifully with the beet dip, pickles, tzatziki, and some roasted carrots.

#5 and #6 Hummus bowls X2: While most people think of hummus as a snack, it can also be the star of the show. Our host demonstrates two different hearty hummus bowls that make complete healthy meals.

#7 Crispy salmon salad: Fresh veggies combine with the meal prep Mediterranean salad and some pan-cooked salmon for an amazing main course salad.
