A few days ago I set out to make my favorite recipe of Instant Pot collard greens and somewhere in the shuffle of moving stuff in and out of the RV, I lost the recipe. A simple recipe, I knew the ingredients but I had honed the amounts and cook times until we really like it. Thankfully, I had posted it on RVtravel.com and found it again.
Yesterday we had collard greens and chicken, so with the leftover rotisserie chicken I made my RV “cheater” chicken noodle soup. Everyone loves it and I have never divulged the simple recipe, until now.
Start with a package of Chicken Noodle soup. I could only find this Shore Lunch brand but Bear Country makes a good dry package soup too.
Ingredients
- 1 package dry chicken noodle soup mix
- 1 onion, chopped
- 1/2 cup baby carrots, sliced
- 2 celery sticks, sliced
- 1/2 to 1 bell pepper, if desired
- 1 can diced tomatoes, if desired
- Olive oil
- 8 cups water
- 2-4 tsp. Better Than Bouillon Chicken Base. My new favorite for adding extra flavor.
- Pepper and salt to taste (Note soup mix, Bouillon base, and rotisserie chicken can be salty already.)
- Rotisserie chicken or precooked diced frozen chicken (Tyson)
Easy chicken noodle soup cooking instructions
- Sauté onion, carrots, celery, and bell pepper until onion is soft.
- Add 8 cups water and bring to boil.
- Whisk in soup package.
- Add diced tomatoes, if desired.
- Add Better Than Bouillon, if desired.
- Add chicken.
- Simmer for about 15 minutes until carrots and celery are soft.
- Discard the soup mix package and they will never know!
It is better the next day and freezes well.
