5 lasagna recipes with a twist

Meatball Lasagna

by Jane Whittaker from Massena (now in FL), NY

A tasty twist on an Italian classic. It’s like a traditional lasagna but with meatballs rather than meat sauce. Super hearty, this main meal is full of meatballs, savory ricotta cheese, and gooey mozzarella. This takes a while to prep and bake, so we suggest reserving it for a special occasion.

It will serve a crowd, and the recipe makes a massive lasagna. When assembled, it might have been 10 pounds! Here’s the recipe.

Mexican Lasagna

by Dianna Champlain from Southaven, MS

This Mexican lasagna is a fantastic twist. It’s comfort food with a south-of-the-border twist. It tastes like tacos with all the fixings except there are noodles instead of tortillas. Lasagna can be labor intensive but using no-boil noodles takes away one step.

Super flavorful, this hearty dinner is layered with black beans, corn, tomatoes with green chilies, salsa, cheese sauce, and shredded cheese. Yum! Get the recipe here.

Lasagna with Vodka Sauce

by Angie Robinson from Findlay, OH

Veal, pork, and beef combined make for a wonderful flavor. I love this combination in meatloaf and it’s proven to be just as good in lasagna. The beef provides a robust flavor, pork adds fat, and veal is just delicious. You can really taste the diced tomatoes in each bite of the meat mixture.

I loved using jarred vodka sauce. Not only is it convenient, and who isn’t looking to save a few minutes in the kitchen, but it’s creamier than traditional red sauce. It adds just a little bit of something extra to the overall flavor. Here’s the recipe.

Lasagna With Zucchini

by Terri Opgenorth from Lake Mills, WI

Substituting zucchini strips for pasta is a delicious low-carb option for lasagna. It’s so robust and delicious you don’t even miss the noodles. This easy lasagna recipe is hearty and cheesy with just a hint of spice, thanks to the red pepper flakes.

Even if you’re not low-carb, give this recipe a try. It’s super tasty. Get the recipe here.

Spinach Artichoke Lasagna Rolls

by Melody Perkins from Altus, OK

This can be made as a traditional lasagna, but rolling the noodles up is a fun way to serve these spinach artichoke lasagna rolls. The cheese mixture includes a combination of mozzarella, Provolone, Romano, Asiago, and Parmesan. Once combined and baked, they are nice and gooey. Then, there are the layers of spinach, artichokes, and browned Italian sausage. If there’s extra filling, fill a few more noodles and bake them in another pan.

We think these lasagna rolls will be a big hit around your dinner table. Here’s the recipe.
