Every aspect of this delicious and fresh salad deserves a Blue Ribbon. The mixture of greens adds lots of interest and flavor. There are slices of strawberries and crumbles of blue cheese throughout the salad. The crunch from the candied pecans is lovely. Coated in a spice mix made with cinnamon, cloves, and nutmeg, we could snack on them all day. Drizzled on top is a sweet and tangy poppy seed dressing that complements all the flavors of the salad. A fantastic grilled chicken salad that’s the perfect light but hearty meal on a hot summer day. It really is restaurant quality. Depending on what ingredients you add, you can make this as fancy or plain as you’d like. We used mixed greens to elevate the salad a bit. The toppings suggested all complement each other. We loved the bit of fresh green onion added. Brushing the chicken with butter as it grills keeps it nice and juicy. It also adds a nice flavor to the chicken breast.
