Black Bean and Quinoa Salad With A Kick

by Amy Croyle from Bellingham, WA

Vegetarian, dairy-free, and gluten-free, this black bean and quinoa salad is filled with Southwest flavor and textures. It has tons of yummy ingredients. Black beans, quinoa, and kale are the base for the salad. Bell peppers add some crunch. We love the pops of sweetness from the fresh corn. Jalapenos add a little kick but can be omitted if you don’t like spice. The homemade dressing has a Southwest feel and brings the flavors together. This is a delicious summer salad you can serve as a side dish or a main meal. Get the recipe here.

BLT Salad With Greek Yogurt Dressing

by Maya Turnor from Tumwater, WA

When you say BLT, you’ll win everyone over with this recipe. It features bacon, lettuce, and tomato like the sandwich, but it mixes in pasta and tossed with a creamy dressing to create a pasta salad. The lettuce and tomatoes are fresh and a flavorful contrast to the crispy, savory bacon. You may want to prepare a little extra dressing… it’s that good. Enjoy this pasta salad alone, add grilled chicken, or serve it as a side dish. Here’s the recipe.

King Timmy’s Prime Rib Salad

by Sherri Williams from Crestview, FL

With plenty of fresh vegetables to keep things interesting, this flavorful salad is fit for a king! Thin shavings of prime rib are mixed with savory Parmesan cheese. Thick, sweet, and tangy, the dressing is fantastic. We loved this delicious and lighter way to use prime rib leftovers. Get the recipe here.

Strawberry Fields Salad with Poppy Seed Dressing and Candied Pecans

by Melissa K. Hand from Spring Hill, TN

Every aspect of this delicious and fresh salad deserves a Blue Ribbon. The mixture of greens adds lots of interest and flavor. There are slices of strawberries and crumbles of blue cheese throughout the salad. The crunch from the candied pecans is lovely. Coated in a spice mix made with cinnamon, cloves, and nutmeg, we could snack on them all day. Drizzled on top is a sweet and tangy poppy seed dressing that complements all the flavors of the salad. It’s one of the best homemade poppy seed dressings we’ve had. We opted not to add the sliced red onion, but it would add the perfect bite. Enjoy this salad with grilled chicken or fish. Cobb Potato Salad

by Linda Bonwill from Englewood, FL

This recipe takes a wonderful potato salad, with a sweet and tangy dressing, to the next level with all the yummy topping of a classic cobb salad. Super hearty, it can be served as a meal. Our favorite part is the flavor of the almost sweet potato salad combined with tangy blue cheese. With tons of textures and flavors, this is a great potato salad for potlucks or BBQs. Here’s the recipe.

Grilled Chicken Salad, Restaurant Style

by Peggi Anne Tebben from Granbury, TX

A fantastic grilled chicken salad that’s the perfect light but hearty meal on a hot summer day. It really is restaurant quality. Depending on what ingredients you add, you can make this as fancy or plain as you’d like. We used mixed greens to elevate the salad a bit. The toppings suggested all complement each other. We loved the bit of fresh green onion added. Brushing the chicken with butter as it grills keeps it nice and juicy. It also adds a nice flavor to the chicken breast. Follow with the suggested topics or go crazy with your own, the sliced grilled chicken is the star of this salad. Here’s the recipe.
