Sweet and Savory Curry Chicken Salad

One of the best things about chicken salad is its versatility. This curry chicken salad has savory chicken, crunchy celery, and sweet raisins coated in a creamy and tangy curry mayonnaise. Bits of pineapple and flakes of coconut are folded in for a tropical twist. Sprinkled with crispy bacon bits and fresh parsley add last pops of flavor. Perfect for lunch, brunch, or a light dinner. Hawaiian Shrimp or Chicken Curry

There’s a fusion of flavors in this Hawaiian-style curry. The mix of butter, garlic, onions, fresh ginger, and curry powder is fantastic. When mixed with chicken stock and coconut milk, it creates a wonderful sauce for the protein to cook in. This can be made with shrimp or chicken. We did use the optional sugar to help balance the savory flavors, but it can be omitted. Here’s the recipe.

Panang Curry

We love Panang curry – it’s one of our favorite Thai dishes. The beauty of this recipe is that you can prepare it the way you like. Tosca’s version is fantastic. He adds a bit of heat by using Tabasco sauce. It gives the dish a nice kick of flavor. The mix of curry paste with peanut butter and coconut milk creates a fantastic blend of classic Thai flavors. Chicken Rama in Thai Peanut Sauce

We see why Vicki is proud of this recipe. This Chicken Rama tastes very authentic. The creamy peanut butter sauce is so easy to prepare. With a very mild spice, its nutty flavor pairs well with the coconut milk. If you like spicier food, add some red pepper flakes. Serving this over spinach adds a nice fresh taste to the dish. Curried Pumpkin Soup
