Pancake Breakfast Sandwiches To Freeze
by Wendy Cook from Salem, OR
These sweet and savory copycat pancake breakfast sandwiches will be a big hit with your family! They’re similar to a breakfast fast food favorite, but making them at home is a more cost-effective way to enjoy them. With pancakes, eggs, sausage, and cheese, it’s everything you love about breakfast in one sandwich. We brushed the inside of the pancakes with a little maple syrup for the perfect balance of sweet and savory. They take a while to make, but they can be prepped on the weekend, frozen, and thawed when you need a quick grab-and-go breakfast. We used an egg mold to make the pancakes just the right size. Premade frozen ones could be used too to save time. Here’s the recipe.

Savory eggs are a nice contrast to the sweet corn and smoky bacon. Onion and bell peppers add a lot of flavor. The tortillas crisp up and hold in the gooey cheese and other sandwich ingredients. Great if you’re serving a crowd or need an easy grab-and-go breakfast. Click here for the recipe.
