It’s National Sweet Potato Day, which means one thing: Make a sweet potato recipe!

Chili Sweet Potato Fries

by Mindy Sena from Burlington, IA

A healthier twist on chili cheese fries that will satisfy cravings. Sweet potato fries are the base for this dish, rather than french fries. Using vegetarian chili and low-fat cheese cuts down on the calories but still gives the gooey cheesiness you’re after. The slightly sweet sweet potato fries are a nice contrast with the savory chili and cheese. Green onions sprinkled on top add a nice pop of freshness. These would be a great appetizer for game day or a small gathering. Click here for the recipe.

Apricot-Glazed Sweet Potatoes

by Tammy Raynes from Natchitoches, LA

Sweet and savory, these apricot-glazed sweet potatoes are a delicious holiday side dish. The natural sweetness of the apricot glaze adds a fruity and slightly tangy note to the dish. It complements the early sweetness of the fresh sweet potatoes. Pecans add a nutty and buttery flavor that completes the dish. Here’s the recipe.

Sweet Potato Biscuits

by David Reeves from Collierville, TN

These sweet potato biscuits are fluffy, flaky, and filled with fall spices. They have a subtle sweetness that is perfectly balanced with a hint of warm spices. If you don’t want to microwave the fresh sweet potatoes, roast them in a 400-degree oven for about an hour. Click here for the recipe.

Sweet Potato Banana Bread

by Teresa Jacobson from New Orleans, LA

This quick bread is a twist on plain banana bread that’s full of flavor. Nuts add a nice crunch. This recipe uses bananas and mashed sweet potatoes which make the bread extremely moist and tender. The bread is not overly sweet so the glaze on top adds sweetness to the bread. Perfect for breakfast or an afternoon snack. Get the recipe here.

Fried Sweet Potato Tidbits

by Michelle Snider from Fairfield, TX

Serve these sweet potato tidbits as a side dish or a snack. If you dip them in honey, as suggested, they could almost be a dessert. The batter is seasoned with sweet and savory spices along with a touch of sugar. Once fried, the batter crisps and gives the sweet potato fries a nice balance of sweet and savory. Here’s the recipe.

I make sweet potato pie. I won’t buy it as I believe cognitive dissonance makes a lot of people dislike it- it smells like pumpkin pie but doesn’t taste like it. I don’t add the cinnamon but do add nutmeg and mace, Mace is my secret go-to for other things like moussaka
