Recipes for your sweetheart: Valentine’s Day desserts

Chocolate Strawberry Valentines

by Jane Whittaker from Massena (now in FL), NY

Not only are these chocolate strawberry cakes yummy, but they also look beautiful. No one would guess they start with a box of Devil’s Food cake mix. The moist, rich chocolate cake has a sweet strawberry compote on top. They both pair nicely with the tangy, creamy cheese frosting. This easy dessert is topped with a whipped topping and fresh sliced strawberries, but fresh whipped cream could be used, too. We also topped ours with festive sprinkles. It’s a wonderful treat for your sweetheart on Valentine’s Day. Click here for the recipe.

Chocolate Cherry Thumbprint Cookies

by Katrina Freed from Newark, DE

These chocolate cherry thumbprint cookies are a chocolate lover’s dream cookie! Adding melted chocolate to the cookie intensifies the flavor. Soft and chewy, we were reminded of a chocolate-covered cherry with each bite. We know we eat with our eyes first, and creating a thumbprint cookie with the cherry in the middle is adorable. Drizzling chocolate across the top makes you want to take a big bite. They’re easy to make and packed with chocolaty goodness. We can tell why these are a crowd pleaser. Here’s the recipe.

Ricotta Mascarpone Mousse w/ Balsamic Strawberries

by Jo Anne Sugimoto from Kaneohe, HI

This is one of those deceptively easy desserts that will really impress your guests! Alone, both components are great, but when combined it becomes an amazing strawberry dessert. The mousse is light and creamy. It’s rich but not overly sweet. Where things get interesting is the strawberries. The sweet strawberries mixed with balsamic vinegar and a bit of sugar are sweet, slightly savory, and tangy all at the same time. A wonderful contrast to the creamy mousse. A fantastic dessert when fresh strawberries are in season. We enjoyed this treat a lot. Get the recipe here.

Raspberry Chocolate Bars

by Teresa Jacobson from New Orleans, LA

The combination of raspberry and chocolate in these cookie bars is divine. There are four layers of textures and flavor. They start with a crumbly shortbread crust, then a creamy cheesecake, next is tart raspberry jam, and finally a silky chocolate layer on top. Feel free to get creative and change the flavor of the jam. Each bite tastes like a fine dessert. They’ll be very popular wherever you bring them. Get the recipe here.

Maraschino Cherry Bars

by Gail Springsteen from Waupaca, WI

These maraschino cherry bars are delicious any time of the year. They’re moist, tender, and chewy with a nice crunch from the pecans. The crust tastes like a buttery shortbread cookie. Drizzling the rich and creamy frosting adds a final punch of cherry flavor. We used all of the 2 Tbsp of maraschino cherry juice for the frosting. Click here for the recipe.
